When I worked at Dillman’s, I met the dude who was responsible for creating the soundtracks to the Sodikoff restaurants, and each place is supposed to have its own distinct vibe.
When Dillman’s opened, it was more of a legit “delicatessen” and the soundtrack was a lot of Man Man, Gogol Bordello, and some other loud, Romanian-sounding stuff and maybe some weird brass thrown in for good measure. The crowd hated it, so the music changed to basically the same shit as Maude’s and Gilt.
I cannot even begin to imagine how much money that guy makes.
…BUT! He did put a Shivers song in the mix, so I can’t fault him for too much. :)
